Saffron is the world's most expensive spice, because obtaining it from individually harvested crocus pistils is extremely labor-intensive; it takes as many as 170000 flowers for 1 kilogram of saffron. Fortunately, a pinch is enough to add color and flavor to a large dish. Good saffron should be a year old at the most and characterized by its bright orange color. Usage:

Experienced culinary experts, before adding saffron to a dish, break saffron strands and soak them in water or sherry for about 10 minutes. And then they add the saffron and the liquid in which it was soaked to the dish. Then the saffron blends better with the whole dish - evenly distributing its flavor and color in the dish. Powdered saffron does not need to be soaked beforehand.
